Spicy Miso Ramen

To make Spicy Miso Ramen for two, you’ll need a few key ingredients: ramen noodles, water, oil, green onions, ginger paste, garlic paste, miso paste, gochujang paste, vegetable bouillon, broccoli, sweet corn, bell pepper, green onions, air-fried tofu cubes, chili oil, and additional green onions for topping. Start by cooking the noodles according to the package instructions and set them aside. Then, in a large pot, heat some oil and sauté chopped green onions, ginger paste, and garlic paste until fragrant. Next, add miso paste and gochujang paste, stirring for another minute. Pour in water and vegetable bouillon, bringing the mixture to a simmer.

Now, add in broccoli florets, sweet corn kernels, thinly sliced bell pepper, and more chopped green onions. Let everything simmer until the veggies are tender, usually about 10-12 minutes. While the broth simmers, air-fry some tofu cubes until they’re crispy on the outside. Once the broth is ready, divide the cooked ramen noodles into two bowls. Ladle the spicy miso broth and vegetables over the noodles, then top each bowl with the air-fried tofu cubes. For an extra kick, drizzle some chili oil over the top and sprinkle with more chopped green onions.

This homemade ramen is bursting with flavor, combining the richness of miso with the heat of gochujang for a deliciously spicy broth. The assorted vegetables add freshness and texture, while the crispy tofu adds protein and a satisfying crunch. It’s a comforting and satisfying meal that’s perfect for warming up on chilly days. Adjust the spiciness to your liking by adding more or less gochujang paste. Enjoy this flavorful bowl of Spicy Miso Ramen with a friend or loved one!
