Ingredients

  • 2 tablespoons miso paste
  • 1 tablespoon gochujang paste adjust to taste for desired spiciness
  • 1 tablespoon vegetable bouillon
  • 4 cups water
  • 1 cup broccoli florets
  • 1/2 cup sweet corn kernels
  • 1/2 bell pepper thinly sliced
  • 2 green onions chopped
  • 1 cup air-fried tofu cubes

For Topping:

  • Chilli oil
  • Chopped green onions

Instructions

  • Start by preparing the broth. Heat oil in a large pot over medium heat. Add chopped green onions, ginger paste, and garlic paste. Sauté for 2-3 minutes until fragrant.
  • Stir in miso paste and gochujang paste. Cook for another minute, stirring continuously.
  • Add vegetable bouillon and 4 cups of water. Bring the broth to a simmer.
  • Once simmering, add broccoli florets, sweet corn kernels, bell pepper slices, and chopped green onions. Let it simmer for about 10-12 minutes until the vegetables are tender.
  • While the broth is simmering, cook the ramen noodles according to the package instructions. Drain and set aside.
  • Add air-fried tofu cubes to the broth and let it heat through for a couple of minutes.
  • Divide the cooked ramen noodles into two large serving bowls.
  • Ladle the spicy miso broth and vegetables over the noodles.
