Start by preparing the broth. Heat oil in a large pot over medium heat. Add chopped green onions, ginger paste, and garlic paste. Sauté for 2-3 minutes until fragrant.
Stir in miso paste and gochujang paste. Cook for another minute, stirring continuously.
Add vegetable bouillon and 4 cups of water. Bring the broth to a simmer.
Once simmering, add broccoli florets, sweet corn kernels, bell pepper slices, and chopped green onions. Let it simmer for about 10-12 minutes until the vegetables are tender.
While the broth is simmering, cook the ramen noodles according to the package instructions. Drain and set aside.
Add air-fried tofu cubes to the broth and let it heat through for a couple of minutes.
Divide the cooked ramen noodles into two large serving bowls.
Ladle the spicy miso broth and vegetables over the noodles.
Drizzle with chili oil for an extra kick and sprinkle chopped green onions on top.
