Biryani Spiced Chickpea Bowl
Ingredients
Air-Fried Chickpea Mix:
- 1 can 15 oz chickpeas, rinsed, drained, and thoroughly dried
- 1 tbsp olive oil
- 1 tbsp Fadwa’s Biryani Masala
- Salt to taste
- ¼ cup red onion finely diced
- ¼ cup red or green bell pepper finely diced
- 1 –2 green chilies finely chopped
Fresh Salad Base:
- ½ cup carrots grated
- 1 cup cucumber finely chopped
- 1 cup tomatoes seeds removed & finely chopped
- 1 ripe avocado diced
- ¼ cup walnuts roughly chopped
- ¼ cup fresh coriander/cilantro leaves finely chopped
Dressing & Finisher:
- Juice of ½ fresh lemon
- 1 tsp chaat masala optional
Instructions
Step 1: Season & Air-Fry Chickpeas
- In a mixing bowl, toss the thoroughly dried chickpeas with olive oil, salt, and Fadwa’s Biryani Masala until evenly coated.
- Transfer to your air fryer basket and air-fry at 390°F (200°C) for 10–12 minutes, shaking the basket halfway through.
Step 2: Add & Char the Veggies
- Add the diced red onion, bell pepper, and green chilies directly into the air fryer basket over the chickpeas.
- Air-fry for another 3–4 minutes until the veggies are slightly soft and lightly charred around the edges.
Step 3: Assemble the Salad
- In a large salad bowl, combine the grated carrots, chopped cucumber, diced tomatoes, avocado, walnuts, and fresh coriander.
- Add the warm, crispy chickpea and veggie mix straight from the air fryer into the bowl.
Step 4: Toss & Serve
- Dust with chaat masala (if using) and squeeze fresh lemon juice over the top.
