Baked Beans & Avocado Toast

This Baked beans and Avocado Toast is a quick, easy, delicious and protein rich breakfast ready in 10 mins using simple ingredients like baked beans, ripe avocado, cracked pepper and sev. This toast is so easy and quick to prepare on a busy morning! I have used TJ’s giant baked beans, ripe avocado and sev(chickpea). The ingredients are so simple and easy to find at any local grocery stores.

If you would like to use alternative forms of beans you can opt for homemade chole, rajma, black beans, pinto beans, refried beans or even green peas. To make this toast even more healthy I have used whole wheat bread in this recipe. The topping of sev can be replaced with micro-greens or pickled jalapeño’s as per taste preference.

We love to make quick toast recipes on busy morning or sometimes even on the days we plan to travel. Toasts are a great easy option. While packing the baked beans toast for lunch box or while traveling, I keep the toasted bread, baked beans and avocado separate to avoid sogginess. A tip here to keep the mashed avocado in lunch box fresh is to add a dash of lemon juice on top. Any crispy topping like sev to give it an Indian touch, pickled veggies (jalapeno. onion, olives, peppers, cucumbers), crispy jalapeno, crispy onion, crispy beets, crispy dillies, tortilla strips, spicy peanuts can be used.

I usually pair the toasts with a cup of piping hot south Indian filter coffee or masala chai, few nuts of choice and fresh fruits. I will be posting many other quick toast recipe soon, stay tuned!!

Baked Beans & Avocado Toast

Ingredients

  • 1 avocado
  • 1 can baked beans trader joe's
  • 1/2 tsp black pepper
  • 1/4 cup nylon sev

Instructions

  • Toast the bread in air-fryer for 2 mins @375F.
  • Add 2 tbsp of baked beans and mash them slightly.
  • Top it with mashed avocado, cracked black pepper & sev. Serve immediately.
