Karahi Paneer Burger
Ingredients
High-Protein Chipotle Sauce:
- 1 large Red Bell Pepper
- 3 –4 cloves Garlic
- 10 –15 Raw Cashews soaked in hot water for 10–15 minutes
- ⅓ cup Paneer or Cottage Cheese
- ¼ cup Greek Yogurt
- 1 tbsp Dried Oregano
- ½ tsp Black Pepper Powder
- ½ tsp Salt
- ½ tsp Kashmiri Red Chili Powder
- Splash of water to adjust consistency
- Garnish: Chili flakes & oregano
Paneer Patties:
- 200 g Low-Fat Paneer crumbled or grated
- 1 Boiled Sweet Potato mashed, for binding
- ½ cup Boiled Green Peas
- ¼ cup Boiled Sweet Corn
- 1 small Red Onion finely chopped
- 1 tsp Salt
- 1 tsp Chaat Masala
- 1 tsp Red Chili Flakes
- 1 tsp Oregano
- 1 tbsp Fadwa’s Karahi Masala
- Juice of ½ Lemon
- Handful Fresh Coriander / Cilantro chopped
- 4 –5 Cheese Slices for melting on top
Coating & Air Frying:
- Slurry: 2–3 tbsp rice flour mixed with water to form a smooth dip
- Breadcrumbs: For coating the patties
- Oil spray for air frying
Assembly
- 4 –5 Whole Wheat Burger Buns
- Lettuce leaves

Instructions
Step 1: Make the Smoky Chipotle Sauce
- Roast the Veggies: Place the red bell pepper and whole garlic cloves in the air fryer at 380°F (190°C) for 12–15 minutes (or roast in a pan over medium-high heat) until charred and soft.
- Prep: Peel off the charred skin from the pepper and garlic, then roughly chop.
- Blend: Add the roasted pepper, garlic, soaked cashews, paneer/cottage cheese, Greek yogurt, oregano, black pepper, salt, Kashmiri chili powder, and a small splash of water to a blender. Blend until ultra-smooth and creamy.
- Finish: Transfer to a serving bowl and garnish with dried oregano and chili flakes.
Step 2: Prepare & Shape the Patties
- Combine Ingredients: In a large mixing bowl, combine the crumbled paneer, mashed sweet potato, boiled peas, sweet corn, chopped red onion, and fresh coriander.
- Season: Add the salt, chaat masala, red chili flakes, oregano, lemon juice, and Fadwa’s Karahi Masala.
- Mix & Shape: Mix everything thoroughly using your hands until well combined. Portion the mix and shape into 4–5 thick, even burger patties.
Step 3: Coat & Air Fry the Patties
- Dip & Coat: Prepare a thin, smooth slurry using rice flour and water. Line a plate with breadcrumbs. Briefly dip each patty into the rice flour slurry to moisten it, then press into the breadcrumbs, coating all sides evenly.
- Air Fry: Line your air fryer basket with parchment paper and lightly spray with oil. Place patties in a single layer and air fry at 375°F (190°C) for 12–14 minutes, flipping halfway through and lightly spraying with oil, until golden brown and super crispy. (Note: You can also shallow fry in a skillet over medium heat if you prefer!)
- Melt the Cheese: During the last minute of air frying, place a slice of cheese on top of each patty, close the basket, and let it melt for 60 seconds.
