Ingredients

For Cheela Batter:

  • 75 g Rajgira Flour Amaranth
  • 1.25 cups Water
  • 1 tsp salt

For stir fry:

  • 1 tbsp Rice Flour for slurry
  • 1 tbsp Soy Sauce / Coconut Aminos
  • 1 tsp Mixed Herbs Basil, Oregano
  • 1 tsp Red pepper flakes
  • 1/2 tsp crushed black pepper
  • 1 tsp salt
  • 2 tbsp water
  • 2 tsp Olive oil
  • 200 g Low-fat Paneer cubed
  • 200 g Fresh Veggie Mix Broccoli, peas, green beans, bell pepper, carrots

Side:

  • 220 g Greek Yogurt

Instructions

  • Whisk Rajgira flour with salt and water to create a smooth, flowy batter. Heat a non-stick pan and form 5 small cheelas (approx. 4 inches diameter). Cook until golden brown on both sides.
  • Heat olive oil in a large pan over medium-high heat. Sauté cubed low fat paneer to golden brown and add in the veggie mix and saute until tender-crisp.
  • Season with red pepper flakes, black pepper, oregano, basil, and salt. Whisk rice flour with soy sauce and water to form a slurry. Pour into the pan and stir until the sauce thickens and glazes ingredients.
  • Divide stir fry and cheelas into two servings. Serve each with a side of Greek yogurt
