Instructions
Whisk Rajgira flour with salt and water to create a smooth, flowy batter. Heat a non-stick pan and form 5 small cheelas (approx. 4 inches diameter). Cook until golden brown on both sides.
Heat olive oil in a large pan over medium-high heat. Sauté cubed low fat paneer to golden brown and add in the veggie mix and saute until tender-crisp.
Season with red pepper flakes, black pepper, oregano, basil, and salt. Whisk rice flour with soy sauce and water to form a slurry. Pour into the pan and stir until the sauce thickens and glazes ingredients.
Divide stir fry and cheelas into two servings. Serve each with a side of Greek yogurt
