Savory Sattu & Herb Buttermilk Cooler
Ingredients
- 1 cup Greek yogurt or regular plain yogurt
- 2 to 3 tsp sattu powder roasted chana dal flour
- 1 small cucumber chopped
- 1 handful fresh coriander leaves
- 5 to 6 fresh mint leaves
- 1/2 inch fresh ginger
- 1 small green chili optional, adjust to your preferred warmth
- 1/4 tsp roasted cumin powder plus extra for a final dust
- 2 tbsp sabja seeds basil seeds, soaked in water for 15 minutes until plump
- 1 cup chilled water
- Black salt to taste
- Ice cubes to serve
Instructions
- Blend the Base: In a high-speed blender, combine the fresh coriander, mint leaves, green chili, chopped cucumber, and fresh ginger.
- Add the Cream & Spice: Drop in the yogurt, sattu powder, roasted cumin powder, black salt, and pour over the chilled water. Blend on high until everything is completely liquified, smooth, and beautifully vibrant green.
- Prep the Glasses: Grab two tall glasses and place a generous handful of ice cubes at the bottom of each.
- Layer the Seeds: Divide the plump, gelatinous soaked sabja seeds evenly between both glasses, layering them right over the ice.
- Pour & Serve: Pour the chilled savory buttermilk over the seeds, give it a gentle stir to mix, and finish with a tiny pinch of roasted cumin powder on top for that perfect aromatic touch. Drink fresh and enjoy the instant cool down!
Notes
- Sattu Substitute: If you don’t have store-bought sattu powder on hand, you can simply grind whole roasted chana dal (dalia) in a dry grinder until it forms a fine powder, then sift it before using.
