For Cheela Batter:
- 75 g Rajgira Flour Amaranth
- 1.25 cups Water
- 1 tsp salt
For stir fry:
- 1 tbsp Rice Flour for slurry
- 1 tbsp Soy Sauce / Coconut Aminos
- 1 tsp Mixed Herbs Basil, Oregano
- 1 tsp Red pepper flakes
- 1/2 tsp crushed black pepper
- 1 tsp salt
- 2 tbsp water
- 2 tsp Olive oil
- 200 g Low-fat Paneer cubed
- 200 g Fresh Veggie Mix Broccoli, peas, green beans, bell pepper, carrots
Side:
- 220 g Greek Yogurt
Instructions
- Whisk Rajgira flour with salt and water to create a smooth, flowy batter. Heat a non-stick pan and form 5 small cheelas (approx. 4 inches diameter). Cook until golden brown on both sides.
- Heat olive oil in a large pan over medium-high heat. Sauté cubed low fat paneer to golden brown and add in the veggie mix and saute until tender-crisp.
