Ingredients
- 3-4 dried or fresh butterfly pea flowers
- 1/4 cup Hot water
- 1 tbsp Soaked basil seeds
- 1 tsp Lime juice or 2 thin lime slices
- 1 cup Coconut water
- 2-3 Mint leaves finely chopped
- Ice cubes
- 1 pinch Pink salt optional
Instructions
- In a tea pot, add the fresh or dried butterfly pea flowers and pour the hot water over them. Set aside to steep for 3–5 minutes until deep blue, then let it cool down.
- In a serving glass, add a handful of ice cubes, followed by the soaked basil seeds and chopped mint leaves.
- Pour in the lime juice (or drop in the lime slices) and fill the glass about 3/4 of the way up with chilled coconut water.
- Slowly pour the cooled blue tea right over the top, watch it magically swirl into purple, add a pinch of pink salt if desired, stir, and serve!
Notes
If you can’t find fresh or dried butterfly pea flowers, you can substitute them with 1/2 teaspoon of pure culinary-grade blue matcha (butterfly pea flower powder).
