Quinoa & Black Bean Salad with Creamy Dill Dressing

Ingredients:
Salad Base:
1 cup cooked quinoa
½ cup cooked black beans
½ avocado, diced
1 medium tomato, diced
½ cucumber, diced
1 medium persimmon, diced
1 cup lettuce, roughly chopped

Dressing:
3 tbsp Greek yogurt
1 tbsp lemon juice
¼ tsp salt (adjust to taste)
¼ tsp black pepper
1 tsp dried dill or 1 tbsp fresh dill, chopped

Optional Toppings:
¼ cup roasted crispy edamame
Siracha sauce (to taste)

Method:
- Mix Greek yogurt, lemon juice, salt, black pepper, and dill in a small bowl. Set aside.
- In a large bowl, combine quinoa, black beans, avocado, tomato, cucumber, persimmon, and lettuce.
- Pour the dressing over the salad and toss gently to coat everything evenly.
- Sprinkle with roasted edamame and drizzle siracha (if using), then serve immediately.

Cluster Beans Stir Fry Ingredients: 2 tsp oil 1/2

Cluster Beans Stir Fry

Ingredients:
2 tsp oil
1/2 tsp mustard seeds
1/2 tsp red pepper flakes or 1 dry red chili
A few curry leaves
1 small onion, chopped
1/4 tsp turmeric powder
2 cups cluster beans, chopped
Salt to taste
1/4 cup water
2 tbsp grated coconut
1 tsp lemon juice
Chopped coriander leaves for garnish

Method:
- Heat oil in a pan, add mustard seeds, let them splutter, then add red pepper flakes (or dry chili) and curry leaves. Sauté onions until soft.
- Stir in turmeric, chopped cluster beans, salt, and water. Cover and cook on low heat until beans are tender.
- Add grated coconut, mix well, finish with lemon juice, and garnish with coriander leaves. Serve hot!

Mango Protein Oatmeal Ingredients: 1/2 cup rolled

Mango Protein Oatmeal

Ingredients:
1/2 cup rolled oats
1/2 cup water
1/2 cup oat milk
1 scoop Boba Nutrition vegan mango protein powder
1/4 cup diced fresh or frozen mango (optional)
1/2 tsp chia seeds
1/4 tsp cinnamon (optional)
1-2 tsp maple syrup or honey (optional)
1 tsp almond flakes
konjac boba pearls

Method:
- In a saucepan, add oats, water, oat milk, and mango protein powder. Cook over medium heat, stirring occasionally, until oats are soft and creamy, about 5 minutes.
- Pour into a bowl and top with konjac pearls, chia seeds, almond flakes, and mango chunks (optional). Enjoy your delicious mango protein oatmeal!

Sabudana Khichdi

Ingredients:
1 cup sabudana (soaked for 4-5 hours or overnight)
1 medium potato (peeled and diced)
1/4 cup roasted peanut powder
1 green chili (finely chopped)
1 tsp cumin seeds
Fresh coriander leaves (chopped)
Salt to taste
1 tbsp ghee
A squeeze of lemon juice

Method:
- Rinse the soaked sabudana thoroughly and drain well. Add 1/4 cup roasted peanut powder to the sabudana and mix until evenly coated.
- Heat 1 tablespoon of ghee in a pan, add cumin seeds, and let them splutter. Add diced potatoes and cook until soft, then add chopped green chili and sauté briefly.
- Add the sabudana mixture to the pan, sprinkle with salt, and stir to combine. Cook on low heat, stirring occasionally, until the sabudana turns translucent (about 5-7 minutes).
- Turn off the heat, add chopped coriander leaves and a squeeze of lemon juice. Mix gently and serve warm!
