Ingredients

  • 1 cup sushi rice cooked
  • 2 tbsp furikake seasoning
  • 1/2 cup shredded carrot
  • 1/2 cup edamame beans steamed
  • 1/2 cup roasted corn
  • 1/2 cup air fried tofu cubes

Dressing:

  • 2 tsp lemon juice
  • 2 tsp maple syrup
  • 2 tsp miso paste
  • 2 tsp gochujang
  • 1/2 tsp toasted sesame oil
  • 1 tbsp soy sauce

Instructions

  • Cook 1/2 cup sushi rice according to package instructions. Once cooked, sprinkle furikake seasoning and gently mix.
  • In a small bowl, whisk together lemon juice, maple syrup, miso paste, gochujang, toasted sesame oil, and soy sauce. Adjust quantities to achieve your preferred balance of flavors.
  • Start by placing the seasoned sushi rice in the center of a bowl. Arrange shredded carrot, steamed edamame, roasted corn, and air-fried tofu cubes around the rice in an aesthetically pleasing manner.
  • Generously drizzle the prepared dressing over the bowl. Ensure it's evenly distributed to infuse every bite with the savory-sweet-spicy goodness.
  • Gently toss the ingredients in the bowl to coat them with the dressing. This ensures a harmonious blend of flavors.
