Ingredients

  • tbsp oil
  • 1 bell pepper diced
  • 1 cup broccoli florets
  • 1/2 cup corn kernels
  • 1 carrot julienned
  • 2 green onions finely chopped
  • 1/2 cup shredded lettuce
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 2 cups cooked rice preferably cooled and slightly dry
  • Salt to taste
  • 2 tsp black pepper powder
  • 1 tbsp vinegar
  • 1 tbsp soy sauce

Instructions

  • Heat 1 tbsp oil in a large pan or wok over medium-high heat.
  • Add ginger paste and garlic paste, sauté for 30 seconds until aromatic.
  • Add diced bell pepper, broccoli, corn, julienned carrot, and chopped green onions. Stir-fry for 3-5 minutes until the vegetables are tender yet slightly crisp.
  • Add shredded lettuce to the pan and stir-fry for an additional 1-2 minutes until it wilts slightly.
  • Add the cooked and cooled rice to the pan. Break up any clumps and stir well to combine with the vegetables.
  • Sprinkle salt, black pepper powder, vinegar, and soy sauce over the rice and vegetables. Stir continuously to ensure even distribution of flavors.
  • Cook for an additional 2-3 minutes, stirring occasionally, until everything is well heated through and the rice has absorbed the flavors.
  • Garnish with additional chopped green onions if desired.
  • Serve the Veg Pepper Fried Rice hot as a standalone dish or as a side with your favorite sauce.
