Ingredients

  • 1 pound pasta your choice
  • 1 block extra-firm tofu air-fried and cubed
  • 1 cup roasted corn kernels
  • 1 cup broccoli florets
  • 1 cup mixed veggies bell peppers, red onions
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 packet Your favorite ready-made Taco Al Pastor sauce I have used Saucy lips brand here

Instructions

  • Cook the pasta according to the package instructions. Drain and set aside.
  • Air-fry a block of extra-firm tofu until golden and crispy. Cube the tofu into bite-sized pieces.
  • Prepare a cup of roasted corn kernels and a cup of broccoli florets. Dice a mix of veggies like bell peppers and red onions.
  • In a large pan, combine the air-fried tofu, roasted corn, broccoli florets, and diced bell peppers and red onions.
  • Heat the mixture over medium heat and pour your ready-made Taco Al Pastor sauce generously over it. Stir well, ensuring that the sauce coats every ingredient. Allow it to simmer for a few minutes to enhance the flavors.
  • Add the cooked pasta to the pan. Toss gently, ensuring that the pasta is well-coated with the flavorful sauce and ingredients.
  • Sprinkle shredded cheese over the pasta. Cover the pan briefly to melt the cheese, creating a gooey and delicious topping.
  • Once the cheese is melted, give it a final stir to combine all the ingredients.
