In a medium-sized saucepan, combine the rolled oats, 1/2 tsp cinnamon powder, chopped apple, 1 1/2 cups water, and 1/2 cup milk.
Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to prevent sticking.
Once it starts boiling, reduce the heat to low and simmer for about 5-7 minutes or until the oats are cooked to your desired consistency.
Stir in 1/2 tsp vanilla essence and 2 tbsp date paste (or sweetener alternative) to sweeten the oatmeal. Adjust the sweetness according to your taste.
While the oatmeal is cooking, prepare the topping. In a separate small pan, sauté the chopped apple for a few minutes until it's softened.
Once the oatmeal is ready, divide it into two serving bowls.
Top each serving with the chopped apples and sprinkle 1 tbsp chia seeds over the top.
