Ingredients

  • 1 tbsp oil
  • 1/2 tsp cumin seeds
  • 1 medium-sized sweet potato peeled and diced
  • 1/4 cup frozen green peas
  • 1/2 cup boiled peanuts
  • Splash of water
  • Salt to taste
  • 1/4 tsp red chili powder adjust to your spice preference
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/4 tsp garam masala
  • Handful of fresh coriander leaves chopped
  • 1/2 tbsp lemon juice

Instructions

  • Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  • Add diced sweet potatoes and sauté until they start to brown.
  • Toss in frozen green peas and boiled peanuts. Splash a bit of water to help the veggies cook through without sticking to the pan.
  • Sprinkle salt, red chili powder, cumin powder, coriander powder, and garam masala. Mix well to coat the veggies evenly.
  • Let the stir-fry cook until the sweet potatoes are tender but still have a bite to them.
  • Sprinkle fresh coriander leaves and drizzle lemon juice for a burst of freshness.
  • Give it a final stir and transfer to a serving dish. You can enjoy it as is or pair it with rice or your favorite bread.
