Rinse & pressure cook rice in IP for 6 mins. Fluff up with fork.
In a heavy bottom heat oil, mustard seeds, urad dal, chana dal and let it crackle. Further add chopped onion, curry leaves, green chilies, turmeric powder, salt and saute for 3-4 mins.
Add sugar, lemon juice, cooked rice, grated coconut, coriander leaves and combine well.
For curd rice mix remaining rice with curd, milk, salt, sugar and set aside.
In a pan add ghee, roast cashews and add it to curd rice. To the remaining ghee ad mustard seeds, curry leaves, green chili, let it crackle and add it to curd rice and mix well.
