  • Splash of water to adjust consistency
  • Garnish: Chili flakes & oregano

  • 1 Boiled Sweet Potato mashed, for binding
  • ½ cup Boiled Green Peas
  • ¼ cup Boiled Sweet Corn
  • 1 small Red Onion finely chopped
  • 1 tsp Salt
  • 1 tsp Chaat Masala
  • 1 tsp Red Chili Flakes
  • 1 tsp Oregano
  • 1 tbsp Fadwa’s Karahi Masala
  • Juice of ½ Lemon
  • Handful Fresh Coriander / Cilantro chopped
  • 4 –5 Cheese Slices for melting on top

Coating & Air Frying:

  • Slurry: 2–3 tbsp rice flour mixed with water to form a smooth dip
  • Breadcrumbs: For coating the patties
  • Oil spray for air frying

Assembly

  • 4 –5 Whole Wheat Burger Buns
  • Lettuce leaves
  • Sliced red onions
  • Sliced tomatoes
  • Pickles optional

Instructions

Step 1: Make the Smoky Chipotle Sauce

  • Roast the Veggies: Place the red bell pepper and whole garlic cloves in the air fryer at 380°F (190°C) for 12–15 minutes (or roast in a pan over medium-high heat) until charred and soft.
  • Prep: Peel off the charred skin from the pepper and garlic, then roughly chop.
  • Blend: Add the roasted pepper, garlic, soaked cashews, paneer/cottage cheese, Greek yogurt, oregano, black pepper, salt, Kashmiri chili powder, and a small splash of water to a blender. Blend until ultra-smooth and creamy.
  • Finish: Transfer to a serving bowl and garnish with dried oregano and chili flakes.

Step 2: Prepare & Shape the Patties

  • Combine Ingredients: In a large mixing bowl, combine the crumbled paneer, mashed sweet potato, boiled peas, sweet corn, chopped red onion, and fresh coriander.
  • Season: Add the salt, chaat masala, red chili flakes, oregano, lemon juice, and Fadwa’s Karahi Masala.
  • Mix & Shape: Mix everything thoroughly using your hands until well combined. Portion the mix and shape into 4–5 thick, even burger patties.

Step 3: Coat & Air Fry the Patties

  • Dip & Coat: Prepare a thin, smooth slurry using rice flour and water. Line a plate with breadcrumbs. Briefly dip each patty into the rice flour slurry to moisten it, then press into the breadcrumbs, coating all sides evenly.
  • Air Fry: Line your air fryer basket with parchment paper and lightly spray with oil. Place patties in a single layer and air fry at 375°F (190°C) for 12–14 minutes, flipping halfway through and lightly spraying with oil, until golden brown and super crispy. (Note: You can also shallow fry in a skillet over medium heat if you prefer!)
  • Melt the Cheese: During the last minute of air frying, place a slice of cheese on top of each patty, close the basket, and let it melt for 60 seconds.

Step 4: Assemble the Burgers

  • Lightly toast your whole wheat burger buns.
  • Spread a generous layer of homemade creamy chipotle sauce on both the top and bottom buns.
  • Layer the bottom bun with fresh crisp lettuce, your cheesy Karahi paneer patty, sliced red onions, tomato slices, and optional pickles.
  • Cap it off with the top bun, press down slightly, and enjoy while hot and melty!

Notes

  • Why Rice Flour Slurry? Using rice flour for the slurry creates a lighter, significantly crispier outer crust when air fried compared to regular flour.
  • Time-Saving Hack: Roast the bell pepper and garlic for the sauce in your air fryer first while you chop your veggies and assemble the patty mixture.
  • Air Fryer Temperature Summary:
    • Roasted Bell Pepper & Garlic (Sauce): 380°F (190°C) for 12–15 mins.
    • Burger Patties: 375°F (190°C) for 12–14 mins (plus 1 min to melt cheese).
  • Sweet Potato Binding: The boiled sweet potato acts as a natural binder while adding a subtle sweetness that pairs amazingly with the warm Karahi Masala spices.
  • Make-Ahead Tip: You can prepare the chipotle sauce up to 4 days in advance and keep it stored in an airtight glass jar in the fridge.
