High-Protein Paneer & Sprout Burger

Ingredients

  • Paneer & Sprout Patties:
  • 200 g Paneer cubed
  • ½ cup Sprouted Red Lentils (Whole Masoor) cooked or steamed
  • ½ Red Onion roughly chopped
  • ½ Carrot sliced
  • ½ Green Bell Pepper chopped
  • 3-4 slices Cooked Sweet Potato
  • 2 tbsp Besan Gram Flour
  • 1 tsp Red Chili Powder
  • 1 tsp Cumin Powder
  • 1 tsp Garlic Powder
  • 1 tsp Salt or to taste
  • 2 tbsp Fresh Coriander / Cilantro chopped
  • High-Protein Dill Sauce:
  • ½ cup Cottage Cheese
  • Juice of ½ Lemon
  • ½ tsp red chili powder
  • 1 tsp Honey
  • ½ tsp Salt
  • 1 tsp Dried Dill
  • Assembly & Cooking:
  • 2 Whole Wheat Burger Buns
  • 1 –2 tbsp Butter or Ghee for roasting and toasting
  • 2 Cheese Slices Colby Jack, Cheddar, or Pepper Jack
  • Lettuce leaves
  • Sliced ripe tomatoes
  • Sliced red onions
  • Dill pickles

Instructions

Step 1: Make the High-Protein Dill Sauce

  • Combine: In a mini blender jar, add the cottage cheese, lemon juice, chili powder, salt, honey, and dried dill.
  • Blend: Blend on high until ultra-smooth and velvety. Transfer to a bowl and set aside.

Step 2: Prepare & Knead the Patty Base

  • Pulse Veggies & Protein: In a food processor or Ninja chopper, add the paneer cubes, red onion, carrot, green bell pepper, cooked sweet potato, and sprouted red lentils. Pulse in short bursts until coarsely chopped and evenly combined. Do not over-blend into a paste.
  • Season & Bind: Transfer the pulsed mix to a mixing bowl. Add the besan, red chili powder, cumin powder, garlic powder, salt, and chopped fresh cilantro.
  • Knead: Use your hands to knead the mixture firmly together until a cohesive dough forms. Divide into 2 equal portions.

Step 3: Shape the Patties (The Pro Lid Hack)

  • Prep the Lid: Line a round container lid or shallow ring mold with plastic wrap or a sandwich bag.
  • Press: Press a portion of the patty mixture firmly into the lined lid to form a flat, uniform round.
  • Unmold: Lift the plastic wrap out of the lid and invert it onto your hand to release the shaped patty. Repeat for the second portion.

Step 4: Pan-Roast & Melt Cheese

  • Sear Patties: Heat a heavy tawa or skillet over medium heat with oil or ghee. Place the patties on the pan and sear for 3–4 minutes until a deep golden crust forms.
  • Melt Cheese: Flip the patties, place a slice of cheese on top of each, and cook for another 3–4 minutes until melted and seared on the bottom.
  • Toast Buns: Butter the split burger buns and toast them on the skillet alongside the patties until crisp and golden brown.

Step 5: Assemble the Burgers

  • Spread Sauce: Generously slather the cottage cheese dill sauce on both sides of the toasted buns.
  • Layer: On the bottom bun, layer lettuce leaves, tomato slices, the cheesy paneer patty, red onion rings, and dill pickles.
  • Finish: Close with the top bun and serve immediately!

Notes

  • Binding Tip: Don't skip the cooked sweet potato. It adds essential natural binding and moisture so the patties hold together cleanly without cracking.
  • Texture Adjustment: If your patty mixture feels too soft, add 1 extra tablespoon of besan (chickpea flour). If it feels dry, knead a bit more firmly to release moisture from the paneer and sweet potato.
  • Make-Ahead & Freezing: Shape the raw patties, wrap them individually in parchment paper, and store in an airtight container in the freezer for up to 1 month. Pan-roast directly from frozen over medium-low heat.
  • Sauce Storage: The blended cottage cheese dill sauce can be made in advance and kept in an airtight jar in the fridge for up to 4 days.
