Ingredients

For the Stir-Fry:

  • 1 tbsp cooking oil or chili oil
  • 2 cups cooked dry noodles
  • 1 cup air-fried tofu cubed
  • 2 tbsp soy ginger sauce recipe below
  • 2 tbsp hoisin sauce
  • 2 tsp minced garlic
  • 2 tbsp gochujang pepper paste
  • 4 green onions sliced
  • 1/2 onion sliced
  • 1 bell pepper sliced
  • 1 cup broccoli florets

For the Soy Ginger Sauce:

  • 4 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 2 tbsp honey or maple syrup
  • 1 tbsp grated ginger
  • 2 tsp minced garlic

Instructions

For Stir-Fry Noodles:

  • Heat oil in a large wok or skillet over medium-high heat.
  • Sauté minced garlic until fragrant, then add sliced onion and bell pepper. Stir-fry for 2-3 minutes until slightly softened.
  • Toss in broccoli and cook for an additional 2 minutes.
  • Add air-fried tofu cubes and cook for another 2 minutes.
  • Add the cooked noodles to the wok along with soy ginger sauce, hoisin sauce, and gochujang. Stir-fry for a couple of minutes until everything is well coated.
  • Sprinkle sliced green onions on top and give it a final toss.
  • Serve hot and enjoy your flavorful two-serving Ginger Tofu Stir-Fry Noodles!

Quick Soy Ginger Sauce:

  • In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic.
  • Adjust the sweetness or saltiness according to your taste by adding more honey or soy sauce.
  • Use as a marinade or sauce in your stir-fry. Store any leftovers in the refrigerator for later use.
